Crispy Roasted Potatoes with Broccoli and Lemon Garlic Dressing
Step 1: Preheat and Prepare the Potatoes
Preheat your oven to 425°F (220°C).
Wash and peel (if desired) the potatoes. Cut them into even bite-sized cubes, making sure they’re no larger than 1-inch pieces. This helps them cook evenly and become crispy on the outside.
In a large bowl, toss the potato cubes with olive oil, salt, pepper, sweet paprika, and granulated garlic. Make sure all the potatoes are evenly coated in the seasonings and oil.
Step 2: Roast the Potatoes
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased.
Roast the potatoes in the preheated oven for 25–30 minutes, flipping them halfway through to ensure they cook evenly and get crispy on all sides. The potatoes should be golden brown and tender on the inside.
Step 3: Prepare the Broccoli
While the potatoes are roasting, steam the broccoli florets until they are bright green and slightly tender but still crisp, about 3-4 minutes. You can do this by placing the broccoli in a steaming basket over boiling water or microwaving it with a small amount of water in a covered dish.
Once cooked, drain and set aside.
Step 4: Sauté the Garlic for the Dressing
In a small pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn the garlic.
Remove the pan from the heat and let the garlic cool slightly.
Step 5: Assemble the Dish
In a large serving bowl, combine the roasted potatoes and steamed broccoli.
Drizzle the garlic-infused olive oil over the potatoes and broccoli, followed by the fresh lemon juice. Toss to combine and coat everything evenly.
Season with additional salt and pepper to taste, and garnish with freshly chopped parsley.
Step 6: Add Eggs (Optional)
If you’re adding eggs for extra protein, fry or scramble two eggs in a pan and place them on top of the potato and broccoli mixture. You can also prepare a poached egg or two for a more elegant touch.
Serve immediately while everything is warm, and enjoy!
