  • 7 ounces (200g) Ground beef
  • 2 Large Eggs (100g)
  • Salt and black pepper to taste
  • Pinch of paprika
  • 1 tablespoon (15ml) Olive oil
  • Melted butter, for brushing
  • 2 Tortillas (approx. 100g each)
  • Sliced Mozzarella cheese (amount to taste)
  • 1 ounce (30g) Green onion, chopped
  • 1 teaspoon (5ml) Milk

Instructions:

  • Cook the Ground Beef: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Season with salt, black pepper, and paprika.
  • Prepare the Egg Mixture: In a small bowl, whisk together eggs, milk, and a pinch of salt and pepper.
  • Combine with Beef: Pour the egg mixture over the cooked ground beef and cook, stirring constantly, until the eggs are set and the mixture is cooked through.
  • Assemble Tortillas: Place one tortilla on a plate. Top with a generous amount of the cooked ground beef mixture.
  • Add Cheese: Top with sliced mozzarella cheese.
  • Fold and Seal: Place the second tortilla on top to create a closed tortilla. Press down gently to seal the edges.
  • Cook: Heat a lightly oiled griddle or skillet over medium heat. Cook the folded tortilla for 2-3 minutes per side, or until the cheese is melted and the tortilla is golden brown and crispy.
  • Brush with Butter: Brush the cooked tortillas with melted butter for extra flavor.
  • Garnish and Serve: Garnish with chopped green onions and serve immediately.
