Method of Preparation:
In a saucepan, combine almond milk, sugar and cornstarch. Heat over medium heat.
Split vanilla bean in half, scrape out seeds and add to mixture.
Stir constantly until mixture thickens (about 5 minutes).
Remove from heat and let cool for a few minutes.
Pour mixture into glasses and let cool completely.
Refrigerate for at least 1 hour.
Garnish with orange zest and fresh fruit before serving.
Tip: For an even silkier texture, strain mixture through a fine sieve before pouring into glasses.
