Cranberry Orange Cake:

Ingredients:
2 cups of flour
12 ounces of fresh cranberries
3/4 cup softened unsalted butter
3 room-temperature eggs
2 cups of white sugar
1 tsp of vanilla extract
¼ teaspoon of regular salt
Grated peel from a single orange
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking pan.
2. In a stand mixer, combine eggs and sugar using the whisk attachment. Whip until pale yellow and doubled in volume (3-5 minutes).
3. Add softened butter, vanilla, salt, and orange zest; mix.
4. Stir in flour and cranberries.
5. Bake in preheated oven for 45-50 minutes, or until golden and toothpick comes out clean.
