    Here’s a simple recipe for cod in a tomato lemon butter sauce:

    Ingredients

    • 4 cod fillets (about 6 oz each)
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1 small onion, diced
    • 2 garlic cloves, minced
    • 1 can (14 oz) diced tomatoes, drained
    • Juice of 1 lemon
    • Zest of 1 lemon
    • 4 tablespoons unsalted butter
    • Fresh parsley, chopped (for garnish)

    Instructions

    1. Prepare the Cod: Season the cod fillets with salt and pepper.
    2. Sear the Fish: In a large skillet, heat olive oil over medium-high heat. Add the cod fillets and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
    3. Make the Sauce: In the same skillet, add the onion and cook until translucent, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.
