Directions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
In a medium bowl, mix together 1 cup of flour, softened butter, and 1/4 cup powdered sugar until crumbly. Press the mixture into the bottom of the prepared baking dish to form the crust.
Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden.
While the crust is baking, whisk together the eggs, granulated sugar, 2 tablespoons of flour, baking powder, lemon juice, and lemon zest in a separate bowl until smooth.
Pour the lemon mixture over the baked crust.
Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
Allow the lemon bars to cool completely in the pan. Once cooled, dust with powdered sugar and cut into squares.
