Ingredients:
1 ½ cups (375 g) creamy peanut butter
½ cup (113 g) unsalted butter, softened
1 teaspoon pure vanilla extract
3 cups (360 g) powdered sugar
2 cups (340 g) semisweet chocolate chips
1 tablespoon coconut oil or vegetable oil
Directions:
Prepare the Peanut Butter Mixture:
In a large mixing bowl, combine the creamy peanut butter, softened unsalted butter, and pure vanilla extract.
Using an electric mixer, beat the mixture until smooth and creamy.
Gradually add the powdered sugar, mixing continuously until a firm dough forms.
Shape the Balls:
Take small portions of the peanut butter dough and roll them into 1-inch balls.
Place the balls on a baking sheet lined with parchment paper.
Prepare the Chocolate Coating:
In a microwave-safe bowl, melt the semisweet chocolate chips with the coconut oil in 30-second intervals, stirring in between, until smooth and fully melted.
Coat the Balls:
Dip each peanut butter ball into the melted chocolate, coating it completely.
Return the coated balls to the parchment-lined baking sheet.
Chill:
Refrigerate the chocolate-covered peanut butter balls for at least 1 hour to allow the chocolate to harden.
