Ingredients:
For the filling:
1 tablespoon butter
1/4 cup onion, finely chopped
1/4 cup carrots, diced
1/4 cup celery, diced
1/2 cup cooked chicken, shredded (about 1 small chicken breast)
1/4 cup frozen peas
1/4 cup heavy cream
1/4 cup chicken broth
1 tablespoon flour
Salt and pepper to taste
1/4 teaspoon dried thyme (optional)
1/4 teaspoon garlic powder (optional)
For the crust:
1 sheet of refrigerated puff pastry or pie crust (you can use store-bought for convenience)
1 egg (for egg wash, optional)
Instructions:
Prepare the filling:
In a medium skillet, melt the butter over medium heat.
Add the onions, carrots, and celery, cooking for about 5 minutes until the vegetables are softened.
Stir in the flour and cook for another 1-2 minutes to make a roux.
Slowly add the chicken broth while stirring constantly, then add the heavy cream.
Continue stirring until the mixture thickens, about 3-4 minutes.
Add the shredded chicken and peas. Stir to combine. Season with salt, pepper, thyme, and garlic powder (if using).
Remove from heat and set aside.
