Chicken Broccoli Stuffed Baked Potato

Bake the Potatoes: Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

Prepare the Filling: While the potatoes are baking, mix the shredded chicken, steamed broccoli, sour cream, butter, milk, salt, and pepper in a large bowl until well combined.

Prepare the Potatoes for Stuffing: Once the potatoes are baked, remove them from the oven and allow them to cool slightly. Cut a slit lengthwise in the top of each potato and gently scoop out some of the inside to create space for the filling
Stuff the Potatoes: Fill each potato generously with the chicken and broccoli mixture. Top each stuffed potato with shredded cheddar cheese.
