Ingredients
- For the Dough:
- 2 large potatoes, grated
- 2 eggs
- 1 cup (200ml) kefir or yogurt
- 2 tablespoons olive oil
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1.5 cups (180g) flour
- For the Topping:
- 2 leeks, finely chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon red pepper powder or chili powder
- 2 tablespoons olive oil
- 100g (1 cup) cheddar cheese, shredded
- Fresh parsley, chopped (for garnish)
Directions
- Prepare the Potatoes:
- Grate the potatoes and soak them in water to remove excess starch.
- After 10 minutes, squeeze the grated potatoes to remove excess water and set aside.
- Make the Dough:
- In a mixing bowl, whisk together eggs, kefir or yogurt, olive oil, baking powder, and salt.
- Gradually add flour and mix until a smooth, homogeneous batter forms.
- Prepare the Baking Tray:
- Wet a sheet of baking paper, wring out excess water, and line a baking tray with it.
- Pour the prepared dough onto the tray and spread it out evenly.
- Prepare the Topping:
- In a separate bowl, combine the grated potatoes, chopped leeks, black pepper, salt, red pepper powder, and olive oil. Mix well.
- Spread the potato mixture evenly over the dough.
- Bake:
- Preheat the oven to 200°C (392°F).
- Bake for 30 minutes.
- Add Cheese:
- Remove the tray from the oven and sprinkle shredded cheddar cheese evenly over the top.
- Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and golden.
- Garnish and Serve:
- Once baked, sprinkle with fresh parsley.
- Slice into desired portions and serve warm.
