Ingredients

  • For the Dough:
    • 2 large potatoes, grated
    • 2 eggs
    • 1 cup (200ml) kefir or yogurt
    • 2 tablespoons olive oil
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 1.5 cups (180g) flour
  • For the Topping:
    • 2 leeks, finely chopped
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon salt
    • 1/2 teaspoon red pepper powder or chili powder
    • 2 tablespoons olive oil
    • 100g (1 cup) cheddar cheese, shredded
    • Fresh parsley, chopped (for garnish)

Directions

  • Prepare the Potatoes:
    • Grate the potatoes and soak them in water to remove excess starch.
    • After 10 minutes, squeeze the grated potatoes to remove excess water and set aside.
  • Make the Dough:
    • In a mixing bowl, whisk together eggs, kefir or yogurt, olive oil, baking powder, and salt.
    • Gradually add flour and mix until a smooth, homogeneous batter forms.
  • Prepare the Baking Tray:
    • Wet a sheet of baking paper, wring out excess water, and line a baking tray with it.
    • Pour the prepared dough onto the tray and spread it out evenly.
  • Prepare the Topping:
    • In a separate bowl, combine the grated potatoes, chopped leeks, black pepper, salt, red pepper powder, and olive oil. Mix well.
    • Spread the potato mixture evenly over the dough.
  • Bake:
    • Preheat the oven to 200°C (392°F).
    • Bake for 30 minutes.
  • Add Cheese:
    • Remove the tray from the oven and sprinkle shredded cheddar cheese evenly over the top.
    • Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and golden.
  • Garnish and Serve:
    • Once baked, sprinkle with fresh parsley.
    • Slice into desired portions and serve warm.
