Cheesecake-Stuffed Apples with Graham Cracker Topping
Ingredients:
4-6 apples (firm varieties like Honeycrisp or Granny Smith)
8 oz cream cheese, softened
1/2 cup sugar
1 tsp vanilla extract
1/2 tsp cinnamon (plus extra for topping)
1 tbsp lemon juice
1/2 cup graham cracker crumbs
2 tbsp butter, melted

Wash your apples thoroughly. Use an apple corer or a small knife to carefully remove the cores, making sure to leave the bottoms intact to create a little well for the delicious cheesecake filling.
Mix the Cheesecake Filling:
In a medium-sized bowl, blend together the softened cream cheese, sugar, vanilla extract, and 1/2 tsp of cinnamon. Mix until the texture is smooth and creamy with no lumps remaining.
Stuff the Apples:
Spoon the creamy cheesecake mixture into the hollowed-out apples, pressing down gently to ensure the filling is packed snugly. Fill each apple right up to the top.
