Cheese Baguette Omelette Recipe
Make the egg mixture:
In a mixing bowl, crack the eggs and beat well.
Add the diced tomatoes, chopped onion, sour cream, ground black pepper, salt and chopped chives to the eggs. Mix well.
Bake the baguette:
Pour the egg mixture over the baguette slices in the skillet, making sure all the slices are covered.
Cook over medium heat until the eggs begin to set and the baguette slices are lightly toasted.
Add cheese:
Once the eggs are mostly set, sprinkle the grated cheese evenly over the top (if using).
Cover the pan with a lid and cook over low heat until the cheese is melted and bubbly.
