2 tablespoons pure maple syrup
1/2 teaspoon vanilla extract
Pinch of ground cinnamon for garnish
Directions:
Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
In a large mixing bowl, combine the grated carrots, melted butter, brown sugar, egg, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, baking powder, ground cinnamon, ground nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Spread the batter evenly into the prepared baking dish. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
