Beef Stroganoff with Cream and Mushrooms: Recipe by Alain Ducasse
Ingredients :
600g beef (choose a tender piece like fillet)
150 g mushrooms from Paris
2 shallots
20 cl of liquid cream
30 g of butter
1 tablespoon of old-fashioned mustard
1 tablespoon of flour
25 cl of veal bottom
1 tablespoon of olive oil
Salt and pepper….
A few chives (for garnish)

Preparation:
Cut the beef in strips and return it in a pan with olive oil and butter until golden brown. Get out the meat and reserve.
In the same pan, add chopped shallots and sliced mushrooms. Put back on medium heat until golden brown.
Add flour and mix well to coat veggies. Pour the calf bottom and let cut in half.
Infuse the liquid cream and mustard. Mix well and let simmer over low heat until the sauce is well-greasy.
Add beef strips to sauce and let cook for 5 mins. Salt and pepper to your liking.

Serve with steamed potatoes and garnish with chopped chives.
