Basque-style cod with peppers

    Ingredients:
    • 4 cod fillets
    • 2 red peppers, cut into strips
    • 2 green peppers, cut into strips
    • 1 onion, chopped
    • 2 cloves garlic, chopped
    • 400g chopped tomatoes
    • 2 tablespoons olive oil
    • Sel, poivre, paprika
    • Fresh parsley for garnish

    1. Heat olive oil in a large pan.
    2. Add onion and garlic, boil until translucent.
    3. Add peppers and cook until sweet.
    4. Add chopped tomatoes, salt, pepper and paprika. Let it boil for 10 minutes.
    5. Throw cod fillets into the sauce, cover and cook for 10-15 minutes, until the fish is cooked.
    6. Serve hot, with fresh parsley.
