Barbecue Beef and Rice Casserole
Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 pound ground beef
1 cup barbecue sauce
3 cups cooked rice
1 cup kernel corn
1 cup black beans, rinsed and drained
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped parsley for garnish (optional)

Directions
1. Preheat your oven to 350°F (175°C).
2. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until the onion becomes translucent.
3. Add the ground beef to the skillet. Break it apart with a spatula and cook until it is browned and no longer pink. Drain any excess grease.
4. Stir in the barbecue sauce, salt, and pepper, and cook for an additional 5 minutes to let the flavors meld together.
5. Combine the cooked beef mixture with the cooked rice, corn, and black beans in a large bowl and mix well.
6. Transfer the mixture to a greased 9×13 inch baking dish. Top with shredded cheddar cheese.
7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
8. Remove from oven and let stand for 5 minutes. Garnish with chopped parsley if desired before serving.
