Ingredients
8 slices of homemade bread (preferably a little stale)
250 g mozzarella (preferably fiordilatte)
2 eggs
100 ml milk
100 g breadcrumbs
Salt and pepper to taste
Extra virgin olive oil to taste
Chopped fresh parsley (optional)
Method
Prepare the ingredients:
Drain the mozzarella and cut it into thin slices. If it is very moist, you can put it to drain in a colander for an hour.
Assemble the slices:
Take two slices of bread and place a few slices of mozzarella between them, creating a “sandwich”. Press lightly to make it stick.
Prepare the batter:
In a bowl, beat the eggs with the milk, season with salt and pepper.

Breading:
Dip each “sandwich” in the beaten egg, making sure it is well soaked. Then, coat each side with breadcrumbs, pressing lightly to make it stick.
Arrange in the pan:
Line a baking tray with baking paper and arrange the breaded slices. Drizzle a little extra virgin olive oil over the slices to make them crispier.
Cooking:
Preheat the oven to 200°C and cook the mozzarella in carrozza for about 15-20 minutes, turning them halfway through cooking, until they are golden and crispy.
Serving:
Remove from the oven and leave to cool slightly. You can garnish with chopped fresh parsley, if desired.
Tip
You can also add a slice of ham or speck between the mozzarella for extra flavour!
