Baked Lime Salmon with Avocado Mango Salsa

    Ingredients
    4 salmon fillets
    2 tablespoons olive oil
    2 cloves garlic, minced
    1 teaspoon salt
    1/2 teaspoon black pepper
    Zest of 2 limes
    Juice of 2 limes
    1 avocado, diced
    1 mango, diced
    1/2 red onion, finely chopped
    1/4 cup fresh cilantro, chopped
    1 jalapeno, seeded and finely chopped
    Juice of 1 lime
    Directions
    Preheat your oven to 375 degrees Fahrenheit.
    In a small bowl, mix together the olive oil, minced garlic, salt, pepper, lime zest, and lime juice.
    Place the salmon fillets on a baking sheet lined with parchment paper. Brush the lime mixture over each fillet generously.
    Bake the salmon in the preheated oven for 18-20 minutes, or until the salmon flakes easily with a fork.
    While the salmon is baking, prepare the avocado mango salsa by combining the diced avocado, mango, red onion, cilantro, jalapeno, and lime juice in a medium bowl. Toss gently to combine.
    When the salmon is done baking, remove from the oven and let it rest for a couple of minutes.
    Serve the salmon fillets topped with the freshly made avocado mango salsa.

    For a bit of an extra kick, you can add a teaspoon of honey to the lime mixture before brushing it on the salmon. If mango is out of season, fresh pineapple pieces make an excellent substitute and bring their own unique flavor. Feel free to swap out the cilantro for parsley if it’s more to your liking, and if you prefer a milder salsa, leave out the jalapeno altogether.
