Instructions
- Preheat oven to 450°F (232°C).
- Cut cauliflower into even-sized florets.
- Toss with 1 tablespoon oil, salt, curry powder, maple syrup.
- Heat skillet with remaining oil until very hot.
- Sear cauliflower 5 minutes until golden.
- Transfer to oven, roast 10-15 minutes.
- Stir every 5 minutes until crispy.
- Garnish and serve immediately.

Notes:
- Use high heat oil
- Don’t overcrowd pan
- Watch carefully while searing
