Cheesy Pasta and Potato Cake

    Ingredients:

      • 2 medium potatoes (grated)
      • 200g pasta (spaghetti or any type)
      • 1 yellow bell pepper (diced)
      • 1 red bell pepper (diced)
      • 1 cup shredded mozzarella cheese
      • 1 green bell pepper (diced)
      • 3 large eggs
      • 1/2 cup grated Parmesan cheese
      • 1/2 cup milk or cream
      • Salt and black pepper (to taste)
      • 1 tablespoon olive oil or butter (for greasing the pan)
      • 2 tablespoons fresh parsley (chopped)

    Instructions:

    1. Cook the Pasta:
      • Boil the pasta in salted water until al dente. Drain and set aside.
    2. Prepare the Potatoes:
      • Peel and grate the potatoes. Squeeze out excess water using a kitchen towel.
    3. Prepare the Vegetables:
      • Dice the bell peppers into small pieces.
    4. Mix the Ingredients:
      • In a large bowl, combine the cooked pasta, grated potatoes, diced bell peppers, parsley, mozzarella cheese, and Parmesan cheese.
      • In a separate bowl, whisk together the eggs, milk, salt, and pepper. Pour this mixture into the pasta and vegetables and mix well.
    5. Assemble the Cake:
      • Preheat your oven to 180°C (350°F).
      • Grease a round cake pan with olive oil or butter. Pour the mixture into the pan and press it down evenly.
    6. Bake:
      • Bake in the preheated oven for 30-40 minutes or until the top is golden and firm.
    7. Serve:
      • Let the cake cool slightly before slicing. Serve warm and enjoy!

    This dish is perfect as a main course or a side dish!
