Cowboy Candy (Candied Jalapenos)

    Ingredients:
    18 fresh jalapeño peppers, sliced into rings with stems discarded
    2 cups granulated sugar
    2 cups apple cider vinegar
    2 cups brown sugar
    1 tsp garlic powder
    1 tsp turmeric
    1/4 tsp celery seed
    1/2 tsp cayenne pepper
    Instructions:
    1. Boil sugar, vinegar, sugar, garlic powder, turmeric, celery seed, and cayenne pepper. Heat until sugars dissolve and reduce heat to simmer for 5 minutes.
    2. Add in sliced jalapeño peppers and bring to high heat for 4 minutes.
    3. Transfer peppers into sterilized canning jars, leaving 1/4-inch space.
    4. Boil liquid for another 6 minutes or so, then cool for 3 minutes.
    5. Pour syrup into jars, submerging jalapeños (release air pockets with a chopstick).
    6. Wipe jar rims, seal with lids, and refrigerate.
    7. Chill for 2 weeks (preferably a month) for better flavor. Store in fridge, consume within 2 months.
