Ingredients
2 cups mixed nuts (such as almonds, pecans, and walnuts)
1 cup granulated sugar
1/2 cup water
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract

Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium saucepan, combine the sugar, water, cinnamon, salt, and nutmeg. Stir over medium heat until the sugar has dissolved.
Bring the mixture to a boil, then reduce the heat to a simmer. Add the vanilla extract and stir to combine.
Add the mixed nuts to the saucepan, stirring to coat them evenly with the sugar mixture.
Continue to cook the nuts over low heat, stirring frequently, until the liquid has reduced and the nuts are well-coated, about 5-7 minutes.
Spread the nuts in a single layer on the prepared baking sheet.
Bake in the preheated oven for 10-15 minutes, stirring halfway through, until the nuts are golden and fragrant.
Remove from the oven and allow the nuts to cool completely on the baking sheet. They will become crunchy as they cool.
Once cooled, break apart any clusters and store the candied nuts in an airtight container.
