For the Base:
2 tablespoons olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
2 celery stalks, diced
2 medium carrots, diced
For the Soup:
2 medium zucchinis, chopped into cubes
1 large potato, peeled and cubed
1 cup green beans, trimmed and cut into 1-inch pieces
1 cup diced tomatoes (fresh or canned)
6 cups vegetable broth or water
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Optional Add-Ins:
1/2 cup frozen peas
1/2 cup sweet corn
1 cup cooked pasta, rice, or quinoa for added heartiness
For Garnish:
Fresh parsley, chopped
A sprinkle of Parmesan cheese or nutritional yeast
Crusty bread for serving
