Ingredients:
Caramel Sauce:
3/4 cup sugar (160 g)
1/4 cup water (80 ml)
3/4 cup whipping cream (200 ml)
4 1/4 tablespoons unsalted butter (60 g)
Clusters:
2 1/2 cups salted or unsalted roasted peanuts (400 g)
200 g milk chocolate
30 g dark chocolate (for garnish, optional)
Instructions:
Prepare the caramel sauce:
In a medium saucepan, combine the sugar and water. Cook over medium heat, stirring occasionally, until the sugar dissolves.
Increase the heat to medium and bring the mixture to a boil. Do not stir. Cook until the mixture is a deep amber color (about 10 minutes).
Carefully fold in the whipped cream (the mixture will begin to bubble). Stir until smooth.
Remove from the heat and stir in the butter until completely melted and combined. Set aside and cool slightly.
