Cook the Gnocchi: Bring a large pot of salted water to a boil. Add gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
Brown the Beef: In a skillet, heat olive oil over medium heat. Add minced garlic and ground beef. Cook until beef is thoroughly browned. Season with salt and pepper.
Combine and Melt Cheese: In a large bowl, mix the cooked gnocchi with the browned ground beef. Stir in shredded cheddar and mozzarella until the cheese begins to melt.
Serve: Transfer the gnocchi and beef mixture to a serving dish. Garnish with freshly chopped chives.
